The incredible artwork crafted from reclaimed materials and discarded plastic bags, artfully transformed into the graceful "plastic dragon" that hovers above.

Bistecca Italian Restaurant

The Owner / Investor: BSA Design & Build Firm

Location: Đà Nẵng

Bistecca is a restaurant located on the 7th floor of the New Orient Hotel in Da Nang, offering expansive views of the city and the sparkling Han River. The space combines modern, elegant design with warmth and sophistication, creating the perfect backdrop for guests to experience Italian cuisine in the most complete way. The project was designed and executed by BSA, with the aim of creating a space that is not only aesthetically beautiful but also elevates the dining experience, becoming a distinctive destination within the New Orient Hotel complex.

Livannah - Sips & Bites

The Owner / Investor: CHEZ NOUS - CHI NHÁNH LIVANNAH

Location: Hochiminh City

Inspired by iconic street foods from around the world such as Tapas and Tacos (Spain), Nori and Maki (Japan), skewered dishes from various cultures, and classic Vietnamese street foods like phá lấu, chicken pho, and pho rolls… but with a modern twist that’s more exciting and captivating. Developed around a diverse list of drinks from various drinking cultures, Livannah's drink menu is rich and colorful. You can try wine with European-style tapas or opt for soju or sake when ordering Japanese and Korean dishes.

Embracing the spirit of "No ingredient goes to waste" at the vegetarian restaurant Tales by Chapter, Minh Nguyễn Design has crafted a unique architectural space where the philosophy of sustainable cuisine is deeply and elegantly expressed. The restaurant space not only serves its functional purpose but also tells a story of honoring the values gifted by nature. Inspired by contemporary Nordic design, Tales by Chapter radiates a rustic yet warm and luxurious beauty of a fine dining space. The project was a renovation of an old house, where interior walls were removed to create a large, interconnected area. Natural wood and stone were chosen as primary materials, enhancing aesthetics while fostering a profound connection between guests and nature during their dining experience. A standout feature is the WoodWool acoustic ceiling system—a sustainable material that harmoniously combines the natural essence of wood fibers with the superior functionality of cement. Besides providing outstanding sound absorption and a tranquil atmosphere, this solution underlines the restaurant’s strong commitment to eco-friendly materials. The harmonious blend of unique design and the raw beauty of materials reflects the restaurant’s philosophy, offering a novel experience where all senses are awakened. Beyond a vegetarian restaurant, Tales by Chapter is where interior architecture, cuisine, and sustainable values intertwine in every detail.

Intimate Dining Spaces – A 10-seat main dining room, 1 chef’s counter seat, and 3 private dining rooms (12 seats total) designed for an immersive dining experience. Wine Cellar Integration – A curated selection of wines displayed within the dining room, reinforcing the connection between food and wine pairings. The result is a space that feels both personal and elevated, where every guest is part of the Upstairs story."

The Owner / Investor: Nguyễn Thanh Ánh Châu

Nam Mê Kitchen & Bar is a harmonious blend of Mekong cultural beauty and modern artistic sensibility. Inspired by a romantic love story along an ancient river, the space is designed around three main areas: an outdoor section that recreates the bustling atmosphere of a floating market, an indoor area reminiscent of a ferry journey from Sa Đéc to Chợ Lớn Saigon, and a veranda capturing the elegant charm of a French maiden. Utilizing sustainable green bamboo, an open spatial layout, and natural lighting, Nam Mê offers an experience that deeply connects people with nature. It is not just a culinary destination, but a heartfelt journey to discover the refined and emotional cultural values of the East.

We aim to capture the essence of traditional Vietnamese architecture, drawing inspiration from the ruong houses of Hue and the tube houses of Hoi An. At the same time, we infused modern elements through the use of materials, colors, lighting, and spatial design.

Vien Dining

If cuisine is the thread that connects the past and the present, then the space is the bridge that allows guests to immerse themselves fully in this journey. At Viên, architecture is not just a beautiful backdrop but an integral part of its identity, where each brick, roof tile, and beam of light tells a story of the meaningful intersection between East and West. From the very first glance, Viên evokes a sense of familiarity with its walls clad in fired brick—a material that recalls the old houses in the ancient streets of Hanoi, where the traces of time are embedded in every rustic, simple, and sturdy brick. But rather than keeping the traditional look intact, the fired brick walls at Viên are thoughtfully arranged, combined with natural light and minimalist furnishings, creating a cozy, elegant space that breathes with tradition while subtly embracing contemporary refinement. The fired brick walls at Viên, reminiscent of the ancient streets of Hanoi, are arranged with care, creating a space that beautifully blends nostalgia and modernity. A standout feature in the space is the roof tiles—symbols of the traditional Northern Vietnamese homes. At Viên, however, the roof tiles transcend nostalgia, becoming a fresh reimagining. The type of tile used is the clay fish-scale tile, which appears on window panes, evoking the low, iconic eaves of the old town streets.

A Mà Kitchen

Inspired by the blend of classic and modern beauty found in the Chinatown streets, A Mà Kitchen recreates that space with local elements. At A Mà restaurant, you can enjoy signature dishes and drinks from Guangdong and Hong Kong, right in the heart of Saigon.

Pot Au Phở by Ăn Ăn

The Owner / Investor: Anan Saigon

Location: Hochiminh City

The creation of POT AU PHỞ heralds the next chapter of Chef Peter’s decade-long quest to elevate phở, Vietnam’s national dish to new heights. POT AU PHỞ is a modern phở restaurant inspired by French culinary culture with 14 bar seats and an intimate, open kitchen where guests experience the chefs in action. Expect a menu of flavorful small plates and sophisticated phở. Le Chef Tasting Menu is a pho culinary experience composing of 10 creative dishes such as Caviar Egg Phở, Molecular Phở Pâté Chaud and Phở Bò. This phở noodle restaurant is close to Chef Peter’s heart and pays homage to his first restaurant in Hong Kong, a small pho noodle bar, which he opened more than a decade ago. POT AU PHỞ menu also pays tribute to Chef Peter’s mother who runs a traditional noodle shop in Dalat in central Vietnam famous for her Mì Quảng prawn & pork turmeric noodle soup. A modern interpretation of Mom’s Mì Quảng Noodle is also on the menu. Culinary historians believe that phở originated from Nam Dinh city in the north of Vietnam more than a century ago and that the word “phở” came from “feu” the French word for fire. This iconic Vietnamese national dish is believed to have been adapted from the rustic French beef stew dish called “pot au feu”. The restaurant’s signature dish, Le Pot Au Phở, is inspired by Chef Paul Bocuse’ legendary Black Truffle V.G.E Soup which was created some 45 years ago. POT AU PHỞ was recognized as one the BEST NEW RESTAURANTS IN THE WORLD 2024 by Condé Nast Traveller.

Noriboi Omakase

Water in Japanese culture is not only an essential natural element but also carries profound meanings, reflecting the spirit of harmony with nature and respect for the universe. In Japan, water is considered the source of life and a symbol of purity, continuous movement, and regeneration. Japanese culture shows a special appreciation for water, not only through its use in religious rituals and daily life but also as a source of inspiration for art and philosophy. Omakase is not merely a form; it is a culinary art form. In the Noriboi project, we found a similarity between the Japanese philosophy of respecting nature and the absolute reverence for ingredients, as well as the chef’s hands that nurture the finest ingredients. Therefore, water is the symbol and theme that NORIBOI focuses on and incorporates into all areas of the restaurant through various details and forms. Water is present and can be felt through all the senses in many variations. You can hear the water, see the water, or even touch it directly, with the goal of providing a multi-sensory experience.

YAZAWA Saigon restaurant began operations in Vietnam in 2019. Currently, there are branches in Tokyo, Kyoto (Japan), Singapore, Milano (Italy), Beverly Hills (USA), as well as Ho Chi Minh City and Hanoi. With the desire to introduce the specialty "Black Hair Beef" in the "grilled meat" flavor – a symbol of Japanese culinary culture – to the world, we hope to bring joy to even more customers as they enjoy this dish.

Beer Plaza Ba Na Hillls

Strolling through the French village space, visitors will come across a small street leading to the Beer Plaza square, which spans over 4,000 m2. There, the Beer Plaza restaurant stands tall with the appearance of a giant glass beer barrel, its reflective mirror surface capturing the sky, clouds, and the beautiful surrounding scenery of Ba Na. The Beer Plaza restaurant features two floors offering an Asian-European buffet with a menu of more than 90 authentic dishes. Notably, the restaurant serves distinctive German dark beer that visitors should not miss. The venue also impresses with its lively atmosphere, featuring music and performances by international artists from various countries around the world, all taking place in the restaurant's spacious and luxurious space.

In my imagination, Xào Xạc Bar is like a healing dream — a place where people can lean back on a soft chair under the porch, sip their wine, and joyfully confide in someone dear. In that dream, there is a lush green garden, overgrown with ferns, dotted with clusters of wild daisies, and a mango tree heavy with fruit in a corner. I remember vividly each affectionate face in that dream, radiating both a cheerful spirit and a serene calmness. The gentle rustling of leaves brushing against each other, then falling, covering the rugged path leading to the porch, lingers in my memory. I poured my dream into that rustic porch, the chair where someone once sat, and the heady drops of wine. Perhaps it all started with a naive painting in my mind — so naive that for a long time, I was too shy to put it into words. But today, I am proud to say that this simple dream has truly brought healing — to others, and to myself.

We are also renowned and beloved for our uniquely curated wine list, featuring premium selections served at Michelin 3-star restaurants around the world. The space and architecture of Etesia draw inspiration from Mediterranean culture, creating a warm, intimate yet refined and luxurious experience for guests, harmoniously blending earthy brown and terracotta tones.

Eddie's New York
Deli & Diner

The Owner / Investor: Công ty TNHH EDDIE'S

Location: Hochiminh City

Eddie’s D7, the third Eddie’s New York Deli & Diner location in Saigon, was built in early 2023. As our most challenging project to date, it involved transforming a dilapidated house with problematic ceiling heights and an unconventional floor plan into a vibrant, welcoming diner space. One of the most distinctive features of Eddie’s D7 is its partial open-air design on the ground floor, a last-minute decision made to suit the District 7 lifestyle. The existing mezzanine presented its own challenges, but we incorporated it into the final design to add dimension and space. Additionally, a significant late-stage addition was the creation of a large hole in the ceiling above the mezzanine, allowing us to suspend a classic motorbike through the ceiling—an eye-catching feature that has become a signature element of the space. The project also included the challenge of integrating our popular Treats & Sweets candy shop within the limited area, successfully combining the diner and confectionery concepts. Furthermore, we designed and fitted a compact yet highly efficient kitchen on the ground floor, essential for managing seamless delivery orders alongside dine-in service. The total built-out area of Eddie’s D7 is approximately 300 m². The design was led by the Eddie’s cofounders, with creative and 3D visualization support from a Swiss design firm based in Vietnam, which also assisted with our second location. The collaboration brought consistency to the Eddie’s brand while introducing innovative elements tailored to this new space. The project moved at a remarkable pace, with the design completed during a two-week creative sprint, followed by approximately eight weeks of construction. The result is a dynamic, welcoming space that combines classic 1950s diner elements with a fresh, partially open-air design.

The restaurant has designed a large, spacious kitchen with full equipment so that he and his students can prepare menus with culinary culture with stories.
